The surgical mask stops saliva droplets in both directions.
Saliva is also emitted when talking or breathing, not just when sneezing.
Droplets can reach up to four meters, but many settle within two meters.
The FFP3 mask also stops viruses contained in vapours.
If you feed on a cold glass you see the steam of your breath condensing.
This vapor can contain the virus and can go through a surgical mask, but not an FFP3 mask.
The virtus can survive in the steam for up to 30 minutes.
The gloves and hand washing are used to avoid contaminating the objects or contaminating their hands and then contaminating themselves by touching the face.

If you do not have the mathematical security that all the people present or transited before in the affected area were definitely healthy, you must wear all possible protections, compatible with the situation.
